I want a PVR where I can record things, but then be able to watch them on another TV, ideally via wifi.
I don't mind if it records things to the PVR itself, or to a central NAS drive. Actually recording to a central NAS drive might be preferred as it makes it a bit more flexible.
Does anything like this exist?

You need a NAS drive that can play back media and that supports DLNA.

What about something like an HP Microserver with a couple DVB cards in there to handle all your recording, storage and then serving needs?

It would probably solve the problem, but I was hoping for a simpler solution if it exists.

I believe there's custom firmware for some of the Humax boxes that allow network streaming; otherwise doesn't a Slingbox do something like this (i'm sure they have a PVR version)?
