Or you use parabolic mirror lens, like those accesories for mobiles or Go-Pros.

No need anymore, there are 40mp and bigger sensors now so it can be done with a single sensor/lens.

..In fact I think the whole idea (for video anyway) was introduced by CCTV system developers who realised that you could use a extremely wide angle lens pointing down at the ground and then use software to crop and straighten out the image so you end up with a fixed camera recording a large area which even after the event you can 'move the camera'.

[randomfact] Back in the day a similar technique was used on TV shows, mostly for bluescreen scenes due to the fact motion tracking required stupidly big computer controlled camera rigs and wasn't doable in software like today. So they would use fixed cameras with wide angle lenses and once the CGI elements were composed onto the (background/live-action) plates, they'd pan the shot in editing [/randomfact]

there is a whole section of 360 videos on the youtube apps.
This also works on chrome.
