my bros does this, i suspect its a dodgy water pump or the radiator is blocked, run some flushing stuff through the coolent and see if it helps.

check if the header tank is pressurinsing as kris said.
Do u find your car missfires when starting in the morning? If so get a compression test done or a sniffer test prolly would be cheaper.
Also check if u got an air lock take the header tank cap off and let the engine run and wait for bubles of air to escape from the system.
Also tell tale sings of head gasket is if u can water raunning behind the dash. And also white smoke from the exhaust keep a close eye on that too.
Another problem could be a stuck thermostat. check that water is flowing through the large coolant pipe. u can tell this if it gets hot or not.
The needle should never stay in the red shud go to about 95-98 then fan cut in then cool down back to 90-95ish. The reason it cools down when you are doin around 30mph is the air running into the engine bay is cooling the engine down. So when stationary it will get hot but shud cool down once the fan kicks in.

if it gives the signs of gasket goen, check the head, my dad took the one of this omega he got and it was cracked. now if its cracked between the valve seats then its ok, but this had a cracked casing. he had to get a new head, was 200 quid.

Try fluushing the coolant system and renewing the antifreeze/coolant, basically this should give the water a slightly higher boiling point so you wont get air bubbles forming and creating air locks. i did this yesterday and now i have heat back in the cabin.
