to tell a head gasket has gone is there a mayo in the oil cap is the only way to te if its gone?

no, check the dipstick and the header tank, also excessive water consumption and white smoke and pressure in the cooling system.
a lot of 8v engines will be fine and have mayo in the oil cap.

YOu can get "mayo" on the oil cap/in the oil just because the car doesnt get used much, it isnt a 100% sign of HG failure.

And you might have no mayo in the oil but the HG could still be gone.
It depends where its gone, if its between cylinger and coolant gallery you will just use loads of coolant, get a lot of white smoke out the exhaust, and it will run a bit rough.
