My Corsa b 1.4 16v Ecotec is using about half a pint of water a day, and the water thats left is a reddy kinda rusty colour with loads of froth on top. Its not white smoking or anything though? How hard are head gaskets to do on these? Any tricky bits?

That is bad news. It means that you have not used coolent and the block is rusting.

If it gets bad, you will end up breaking the whole engine let alone headgasket.

It is because the engine is cast iron, so using fresh water makes it rust immediately... hence why you put coolent/antifreeze in!
